以鳕鱼皮为原料, 采用双酶水解法制备鱼蛋白水解物再经亚铁修饰获得鱼蛋白水解物亚铁复合物(Fe-FPH), 并对 Fe-FPH 进行了抗营养性贫血的实验研究。结果表明: (1) 以水解度(DH)为 5%的鱼蛋白水解物为原料, 在 pH 7.0、 温度 20℃、 螯合时间 15min 的条件下可获得 Fe-FPH 6.7%; (2) Fe-FPH蛋白含量为85.1%, 铁含量达40254mg/kg, 氨基酸价为59.62; (3) 抗营养性动物实验研究表明: Fe-FPH给药组第 5 天可显著提高营养性贫血大鼠的 Hb 含量, 第 11 天时表现出极显著效果; Fe-FPH 组, 第 11天有显著降低大鼠血中 PPIX 作用, 到第 18 天时表现出极显著效果。因此, Fe-FPH 不仅含有较高的营养价值, 而且有显著抗营养性贫血功能, 可望成为鳕鱼加工副产物高效利用的有效途径。

Fe-FPH was prepared from cod (Gadous macrocephaius) skin using double-enzymatic method. Its amino acid composition and in vivo anti-anemia action were investigated. Results showed that: (1) Yield of Fe-FPH was 6.7% under the conditions of DH (5%), pH 7.0, 20℃, and a chelating time of 15min. (2) The contents of protein and iron in Fe-FPH were 85.1% and 40254mg/kg, respectively. The amino acid score of the preparation was 59.62%. (3) The anti-anemia experiments revealed that mice treated with Fe-FPH had a significant effect (P<0.05) after 5 days, and had extremely significant effect (P<0.01) after 11 days. The PPIX reduction experiment showed that mice treated with Fe-FPH had a significant effect (P<0.05) after 11 days and extremely significant effect (P<0.01) after 18 days. Fe-FPH had nutritional value and function of improving nutritional anemia. The technology could be used to manufacture value-added product from the byproduct of code.
