乳酸菌胞外产物对副溶血弧菌抑制作用的研究

摘要:
对副溶血弧菌(Vibrio parahaemolyticus)有抑制作用的3株乳酸菌,分别命名为A-1,A-2,A-3,并对其胞外产物的抑制作用进行了研究。结果表明,3株乳 酸菌胞外产物对副溶血弧菌有较强抑制作用,抑菌圈直径分别可达18.6,20.3,19.5 mm;抑菌物质对热处理不敏感:在60,80℃抑菌活性基本不变,在121℃处理20 min条件下抑菌效果分别是原液的67%,83%,74%,蛋白酶K处理对其活性有较大影响,抑菌成分可能是细菌素。进一步研究了细菌素抑菌活性与乳酸菌 培养时间的关系。根据形态特征和常规生理生化反应进行鉴定,A-1,A-2鉴定为嗜热链球菌,A-3鉴定为嗜酸乳杆菌。

Inhibitory activity of Lactobacillus’s metabolic product to Vibrio parahaemolyticus
Abstract:
Three strains of Lactobacillus isolated from yoghourt were named A-1, A-2 and A-3 and their metabolic products can inhibit Vibrio parahaemolyticus. The inhibitory effect of the metabolic product was studied in this paper. The results showed that the metabolic product could inhibit the growth of V. parahaemolyticus; the max bacteriostatic circle diameters of three strains of lactobacilli were 18.6 mm, 20.3 mm, 19.5 mm respectively; the inhibitory activity was heat-stable under 60 ℃ and 80 ℃; the effect can keep 67%, 83% and 74% of the origin liquid even if temperature reaches 100 ℃ for 20min and damage some activity after treating with protease K; the antibacterial component was bacteriocin possibly. The paper also studied the relation between the cultural time of Lactobacillus and antibacterial activity. The strains A-1 and A-2 were identified as Streptococcus thermophilu by morphological character, traditional physiological and biochemical method, and A-3 was identified as Lactobacillus.
